“Energy Bites” Recipe Great for Pregnant and Nursing Moms
“Vegan Energy Bites” have begun popping up in coffee and juice shops all over the city. I’m a total sucker for these because I’ve made them forever in my kitchen and they are delicious. Most places are selling them at the register in beautifully wrapped clear cellophane of 3 bites for $4 or more. My local barista tried to sell me on how good of a deal that was. 😉
As you can see, they are so easy to make, my 9 month old daughter has mastered the recipe.
They are a great go-to for pregnant women needing an energy boost from time to time, and great for hungry, breastfeeding mamas trying to get more oats into their diet to boost supply.
This recipe makes about 25 “bites” and can be stored in the fridge in an airtight container for up to a week. Feel free to mix and match the ingredients. Sometimes I use agave or honey instead of maple syrup. Sometimes I throw in nuts, use hemp hearts instead of chia, etc. Have fun with it! Double the fun and get the kiddos involved. It’s nearly impossible to mess up. Unless you forget the peanut butter like I did this morning. 🙂
- 1 C dry oats
- 2/3 C coconut flakes
- 1/2 C peanut or other nut butter (this one is important!)
- 1/2 C ground flax
- 1/2 C chocolate chips
- 1/3 C maple syrup, honey or agave
- 1 Tbs ground chia
- 1 tsp vanilla extract
Make it happen:
- Mix all the ingredients together in a large bowl.
- Cover and chill for 1/2 hr
- Roll into “bites”
