This is the perfect salad to wrap up those last few outdoor picnics at the end of summer.
Peach Caprese Salad
- 1 ripe tomato
- 1 ripe peach
- 10-12 basil leaves
- 6 oz of mozzarella cheese
- balsamic dressing
- olive oil
- salt and pepper
- Thickly slice the tomato, peach and mozzarella cheese. (Throwing the mozzarella in the freezer for about 10 min makes it easier to slice)
- Layer slices of tomato, peaches, cheese and basil around your platter.
- Drizzle with olive oil, balsamic and top with salt and pepper.
